Cranberry Pancakes

3/4 cup milk
2 tablespoons of melted unsalted butter
1 egg
1 cup flour
2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup fresh or frozen cranberries
1 teaspoon sugar for the berries

Beat milk. butter and eggs together
mix all dry ingredients and add to the wet
Mix just enough to wet the dry.
cut berries in half and sprinkle with sugar.
Microwave on high stirring every 15 seconds until berries start to bubble, allow to cool and add to batter.

I did the berries first so I could wait until they were cool to add into the batter.
Cook your pancakes.  I am going to try these as waffles also.

I will need to buy cranberries, but I think I will try that as waffles.

Added so,e cranberries to my pancake mix, delicious!   Cooked them for a few minutes with sugar and Splenda to soften and sweeten first.  One bag of cranberries made 3-4 batches. Will do again!
