STUFFED ACORN SQUASH

We had this tonight and YUM!!
prep time  5 min  cook time 45 min
serves 4

3 Tbsp Olive Oil
1 onion chopped
2 tsp chopped fresh thyme
3/4 cup of brown rice
1/4 cup of golden raisins or dried cranberries
4 oz crumble feta cheese
2 acorn squash halved

STEP1:  Preheat oven to450f  Heat 2 tbsp. of Olive Oil in sauce pan abd cook onion and thyme for 3 min.  Add rice and 2 cups of water, bring to a boil lower heat and simmer about 10 min or until rice is tender.  Add raisins or cranberries for last 5 minutes.  Remove from heat and add Feta  add salt(if desired) and pepper.

STEP 2:  While rice is cooking, halve and remove seeds from squash.  Place on foil covered baking sheet cut side up.  Coat with Olive Oil and sprinkle with salt and pepper.  Roast until tender about 20-25 minutes.

STEP 3:  Fill Squash with the rice mixture and bake another 29minutes.

It is and the fun thing is I can think of many other things to either add into the stuffing or as a side.  I like the No meat part of it, my husband, not so much. lol.  But we'll be adding this to the menu for sure.
